This cumin grows hard: high altitude, thin rain, small seeds that concentrate everything. Thirty seconds in a dry pan and it goes from earthy to almost lemony, with a resin edge that pre-ground jars lost somewhere in a warehouse year. We grind it to order or sell it whole; whole is correct.
