Curry powder has a bad reputation because most of it is dust with a passport. Ours starts as whole coriander, cumin, fenugreek, and thirteen friends, toasted in a steel pan and ground while the oils are still awake. The color is a turmeric sunrise; the flavor keeps unfolding for a full minute.
