Most "cinnamon" stateside is cassia: loud, hot, one note. True Ceylon peels into feathery layers you can crumble with two fingers, and it tastes like honey, orange, and a bakery at 6 a.m. Steep a quill in cream and pour it over anything with an apple in it.
